Sometimes a plate full of soft scrambled eggs, just hits the spot.


I sure could eat a plate full like this.

I love eggs. Wish I didn't love eggs.

Scrambled eggs. Fried eggs. Easy over eggs. Boiled eggs. Egg omelets. Egg quiche. Eggs Eggs Eggs.

I'm funny about eggs. Sometimes the thought of them makes me feel ill and other times I like them boiled on a salad. :?

I'm not a huge fan of them scrambled, they look even more unappetizing that way. :mrgreen:

Fried egg sandwiches. Fried egg on toast. Fried egg on biscuit. Fried egg on bread.

French toast. French toast using American loaf bread. French toast using Italian bread. French toast using French bread. French toast with salt and pepper. French toast with syrup. French toast with honey.

Boiled eggs. Boiled eggs on tossed salad. Boiled eggs on tuna salad. Boiled eggs on all salads.

Deviled eggs. Deviled eggs on a plate. Deviled eggs on a devil egg plate. Deviled eggs with mustard. Deviled eggs with mayo.

Lightly whisk the eggs, cream and a pinch of salt together until all the ingredients are just combined and the mixture has one consistency.

Heat a small non-stick frying pan for a minute or so, then add the butter and let it melt. Don’t allow the butter to brown or it will discolour the eggs. Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Let it sit for another 10 seconds then stir and fold again.

Repeat until the eggs are softly set and slightly runny in places, then remove from the heat and leave for a few seconds to finish cooking. Give a final stir and serve the velvety scramble without delay.
