Why am I getting surveys sometimes in Spanish with no option to switch them to English.... My profile is set to English, so if I can't convert them I don't want them in my queue in the 1st place

Maybe because 47M in USA speak Spanish. It could be the reason but I really don't know. Maybe is not due your preferences is because the advertisers sent this offers to USA citizens. But I think It should be a user's choice.

I'm in Canada and have language set to English but when doing Peanut Lab or Daily Surveys I sometimes will get a survey in French even if I haven't clicked a survey designated in French. It's probably just a glitch of some sort. That being said I have completed some French language surveys using my limited middle school French

In canada both languages are official really? It could be because some advertisers are looking for a concretlely audience in that language. I think it's the same case of our companion kduttera. But It has more sense in Canada because spanish isn't official in USA.
