I couldn't think of cooking anything at the time, so I just popped open one, cooked with chopped onions, a bit of soy sauce and pepper

I think the sardines you had in mind would be the one in brine or oil; most sardines brands here are often packed in tomato sauce, only the spanish-style is served in oil
